Chances are you’ve come across a Filipino and wondered why they have Spanish-sounding last names, like Garcia or Rodriguez. They have brown skin, eat rice with everything while praying the rosary. Well, why do Canadian have complexions of all races, have Scottish or French sounding last names like Mc Ferguson or Champlain, eat maple syrup with everything while praying to the god of hockey? Because that's just how it it. Just come and eat the food and quit worrying about it.
Okay so here's why:
The Philippines were claimed in the name of Spain in 1521 by Portuguese explorer Ferdinand Magellan. He named the islands after the King Philip II of Spain and were then referred to as Las Felipinas
A catalogue of family names was therefore compiled, incorporating both Spanish surnames and native names earlier collected by the religious orders in order to regulate the administration of justice, public service, finance and public order. The colonialists needed a way to prove the degree of blood relations between parties to a marriage.
As a result of traditional indigenous flavours that have blended with the history of colonialist rule, their style of food has evolved over many centuries from their Austronesian origins (shared with Malaysian and Indonesian cuisines) to a mixed cuisine of Indian, Chinese, Spanish and American influences, in line with the major waves of influence that had enriched the cultures of the archipelago, as well as others adapted to indigenous ingredients and the local palate.[1]
Dishes range from the very simple, like a meal of fried salted fish and rice, to fish curry, chicken curry, complex paellas and cozidos of Iberian origin created for fiestas.
